4 cups chopped, peeled sweet potatoes
1 sweet onion, cut into wedges
2 garlic cloves, sliced
3 tbsp. Walnut Oil
1 tbsp. Olivezia Cinnamon Pear Balsamic, or more to taste
1 pinch salt and ground pepper, or more to taste
Preheat oven to 425 degrees
Mix sweet potatoes, sweet onion, and garlic in a bowl. Drizzle walnut oil, salt and ground pepper over the mixture and toss to coat. Pour into a shallow roasting pan.
Roast sweet potato mixture in preheated oven, turning frequently, until the vegetables are soft and golden brown, about 30 to 35 minutes. Drizzle Cinnamon Pear Balsamic over the vegetables. Season with salt and pepper. Serve and enjoy.
