Mint & Montmorency Cherry Rosé Balsamic Over Fruit and Vegetable Medley Salad

We get excited about salad especially when it features a unique and complex vinaigrette. You may think salads are boring, but we think they can make or break a dinner party. This new balsamic is made with a rosé, making this Montmorency Cherry vinegar pink and oh, so lovely. Blended with oil, salt and pepper, and a little fresh mint, you could pour it on ANY salad, roasted vegetables, or even shrimp. But how about this combo: Cantaloupe, cucumber, pear, tomato, red onion, and the quintessential kiwi. Then top it with a perfectly boiled egg.
Boom! Your party just went viral.
As with all of Camine's recipes, each ingredient makes a huge difference. The subtleties of this vinaigrette are incredible, and the sweet but tart fresh cherry flavor is bold and brave and works PERFECTLY with our carefully selected other ingredients. Besides wanting to drink this from the bottle (Yes, that good.), we definitely encourage you to try this Montmorency Cherry Rosé Balsamic from Olivezia!
INGREDIENTS:
5 to 6 generous leaves of red leaf lettuce
1 small Italian Roma tomato sliced very thin
1/3 cucumber , peeled, and sliced very thin
½ of a ripe Bartlett pear sliced thinly
1 ½ C ripe cantaloupe slices
5 very thin slices of red onionB
1 boiled egg, sliced
1 ½ t fresh mint, julienned
2 ½ T any Ultra Premium Olivezia EVOO
2 T Olivezia Montmorency Cherry Rosé Balsamic Vinegar
½ t kosher salt + ¼ T fresh black pepper
Fresh Italian flat leaf parsley, chopped, to garnish
METHOD:
• Mix the balsamic, oil, salt and pepper, and fresh mint. Whisk well and set aside.
• Prep all ingredients and have them ready to assemble.
• Using a large salad bowl, arrange the red leaf lettuce to one side, leaving the other side open to arrange other ingredients.
• Starting at one side begin to layer each slice, much as you would assemble vegetables for a ratatouille. Curve it around layering the order you prefer until you’ve covered a little over half the bowl.
• Now place the sliced boiled egg in the center.
• Drizzle with the mint cherry vinaigrette and serve.
Note:
This was a very large salad for one person but great when you want impact. Otherwise this makes enough for two salads and serve each in a smaller but still flat bowl.
Serve with a lovely Rosé and crusty baguette from in-store shopping at Olivezia. Can top with grilled salmon for a hearty meal.
